  • WATER: 680g / 205°F
  • TIME: 4.5 - 5 minutes
  1. Separate the Chemex filter to form a cone, placing 3 folds towards the spout of the brewer, and 1 fold towards the back. Rinse very thoroughly, Chemex filters are particularly thick. Discard water.
  2. Add your ground coffee into the brewer, place brewer onto a scale, and tare. 
  3. Begin timer. Bloom with 100g of water. Stir or gently swirl the brewer to ensure all coffee is saturated with water.
  4. At 40 seconds, begin pouring with steady, concentric circles. Start from the center, slowly spiral out to the edge, and then back to the center. Repeat this method for the entire brew. When necessary, pause pouring to keep water level 0.5 in below top of brewer.
  5. Aim to finish pouring all 680g of water at 2:30. Give the brewer a gentle swirl and allow the rest of the water to pass through the brew bed.
